Almost Heaven...


Yes; they're as good as they look.

Where I live, it was a nice snowy morning, and what better than biscuits for breakfast. 

If you're one that bellows and whines about fat, these aren't for you.

If you're one who knows that life is short, and that you need to grab joy wherever you can, these are for you.

Grandma Sadie made biscuits almost daily.  Sometimes more than once.  There wasn't a recipe, but they were always heavenly.  Over the years, I've come across several biscuit recipes in her recipe box (that's now in my kitchen), as well as other recipes.  Still, I remember Sadie keeping things pretty simple; so I've worked on these till I had, what I now use by memory:

I call them Almost Heaven Biscuits in honor of my home state, West Virginia.

Almost Heaven Biscuits                          Preheat oven to 450F

Sift together into medium bowl:
2 cups of unbleached all purpose flour
1 Tablespoon of Baking Powder
1/4 teaspoon of Baking Soda
1 teaspoon of salt

Add 
3 Tablespoons of cold bacon fat
2 Tablespoons of cold butter
1 cup of buttermilk
    
Mix with fork quick and lightly, until all just mixed.  Turn out onto a lightly floured surface.  Fold over onto itself a couple of times; then press lightly out to about and 8 inch circle that's around 1/2 inch thick.  Use floured cutter, or floured edge of juice glass~ each round will be around 2 inches.  Place in 10 inch iron skillet.  Bake for 10-12 minutes, or till slightly browned on top.  SJ

*Top with sausage, butter, jam, creamed tomatoes ~my fav... the possibilities are endless.
